Creamy Kale Pesto Zoodles with Chicken

Kale and zoodles and chicken, oh my!

This creamy, zesty pasta-like dish is going to make your heart sing!  Spiralizing vegetables is the greatest thing ever!  Why didn’t I think of it? 

Substituting zucchini noodles (zoodles) for starchy pasta is one of my favorite dinnertime tricks.  My kids were absolutely against even trying zoodles the first time I made them.

“They look gross!”

“I hate zucchini!”

“We might throw up!”

The first time I prepared them, I won’t even lie, we just ate them raw so maybe that is where the defiance came from.  

Anyways, as time went on and they continued coming face to face with zoodles on their plates, they backed off a little bit.  I still have to mix half spaghetti noodles and half zoodles and then add a tiny bit of pasta sauce when making them spaghetti but hey, progress is progress.  

New Recipes Rock!

Finally, through a lot of trial and error, I created a recipe that not only I love, but my kids will actually eat too! The best part is, its ZOODLES! Also, my love for kale is no secret.  So that was just an added bonus! Does everyone else in the house like kale?  No, unless they are slightly burnt kale chips.

Hope Foods continues to amaze me with their never-ending hummus flavors!  (No, I am not affiliated with Hope Foods in any way). I was so excited to see their kale pesto flavor at Sprouts and was half tempted to open that baby up and try it right then and there.

When I got home, I decided to take a standard go-to lunch meal and spice it up a bit with the kale pesto.  Zoodles with grilled chicken turned into Creamy Kale Pesto Zoodles with Chicken.  My tastebuds cried tears of joy!

Creamy Kale Pesto Zoodles with Chicken

  1. 1 Tablespoon olive oil
  2. 2 medium zucchini, spiralized
  3. 3 Tablespoons kale pesto (I like Hope Foods brand)
  4. 2 cooked/grilled chicken breasts, cut into small pieces
  5. Black pepper to taste
  6. Sea salt to taste
  7. Parmesan cheese (optional)
  1. Heat olive oil in a skillet over medium heat.
  2. Add zoodles to skillet and saute for about 2 minutes.
  3. Stir kale pesto into zoodles and cook for an additional 3 minutes.
  4. Remove from heat and add chicken, stirring to incorporate pesto
  5. Serve and top with fresh parmesan cheese, if desired.
